Firsts...

Well... I haven't been very good at keeping anyone updated on Landon's firsts. I'm usually a VERY organized person and I could very well have a mild case of OCD so it's kind of odd to me that I haven't even started Landon's scrapbook OR his baby book?! 

So... what a better way to recall his firsts thus far than to scour my facebook status updates! Haha - ya I'm good. What got me thinking about all these are that Dr. C said that a lot of babies hit their milestones pretty close to when their parents hit them. So I asked my mom about it and she e-mailed me this...  
I found a box of your stuff that has your baby book in it. You first rolled over on 12-1-80 (2 1/2 months) and I noted you were really good at it by 2-1-81 (4 1/2 months) rolling all over the house. You crawled on 3-20-81 (6 months) and stood up on 3-28-81 (8 days later?!) and walked 7-12-81 (9 1/2 months). Your 1st teeth came in 4-3-81 (6 1/2 months).

So anyway, without further ado - here are Landon's firsts thus far! :) Here's to many more!!!
  • First day home - April 4th
  • First walk in the park - April 15th
  • First night in his own crib - April 21st
  • First time sleeping all the way through the night - April 21st / doing it consistently - June :)
  • First bath - May 2nd
  • First road trip (should have take 5 - took almost 8) - May 13th
  • First time away from mommy - May 15th
  • First smile - May 17th
  • First time home alone with daddy - May 27th
  • First time rolling from belly to back - June 26th
  • First camping trip - July 3rd

 Ya people... that last one's TODAY!!! We're sitting!!!! :) Go Landon! Here's to many, MANY more firsts - I'm sure that crawling can't be that far off!

White Cheese Chicken Lasagna

OH CHEESE HEAVEN! Oh so bad for my diet!

Enter... White Cheese Chicken Lasagna! I hate traditional lasagna so I was a little skeptical at making this but it looked SO good that I couldn't resist. 

Ingredients:
  • 9 lasagna noodles
  • 1/2 cup butter
  • 1 onion, chopped
  • 1 clove garlic, minced
  • 1/2 cup all-purpose flour
  • 1 teaspoon salt
  • 2 cups chicken broth
  • 1 1/2 cups milk
  • 4 cups shredded mozzarella cheese
  • 1 cup grated parmesan cheese
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • 1/2 teaspoon ground black pepper
  • 2 cups ricotta cheese
  • 2 cups cubed cooked chicken
  • 2 (10 oz) packages frozen chopped spinach, thawed and drained
  • 1 tablespoon chopped fresh parsley
  • 1/4 grated Parmesan cheese for topping
Directions:
  1. Preheat over to 350 degrees F. Bring a large pot of lightly salted water to a boil. Cook lasagna noodles in boiling water for 8 to 10 minutes. Drain, and rinse with cold water. 
  2. Melt the butter in a large saucepan over medium heat. Cook the onion and garlic in the butter until tender, stirring frequently. Stir in the flour and salt, and simmer until bubbly. Mix in the broth and milk to a boil stirring constantly for 1 minute. Stir in 2 cups mozzarella cheese and 1/4 cup Parmesan cheese. Season with basil, oregano and pepper. Remove from heat and set aside.
  3. Spread 1/3 of the sauce mixture in the bottom of a 9x13 inch baking dish. Layer with 3 of the noodles, the ricotta and the chicken. Arrange 3 of the noodles over the chicken and layer with 1/3 of the sauce mixture, spinach and the remaining 2 cups of mozzarella cheese and 1/2 cup Parmesan cheese. Arrange remaining 3 noodles over cheese and spread remaining sauce evenly over noodles. Sprinkle with parsley and 1/4 cup Parmesan cheese.
  4. Bake 35 to 40 minutes in the preheated oven.

I almost forgot!

The horrible part of our 4 month checkup.... SHOTS!!! :( **Sad face**

In all honesty, Landon took them like a champ! Obviously the shock of a freakin needle in the leg is enough to startle anyone (let alone twice!) but after only a few tears and some cuddles from daddy, we were on our way out the door!

We went straight home and little man was out by the time his head hit his crib... and then, he slept for something like 3 or 4 hours. But when he woke up, instead of happy Landon, he was grumpy, fussy Landon. With swollen little thighs to boot!

We spent the rest of the afternoon in tears :( We gave him some baby Tylenol but good thing Grandma Robin was in town... only she had the touch to get him to calm down and rest.

Much needed UPDATE!!!

Well looky what I found!!! An unsecured internet connection - thank you whichever neighbor doesn't know how to password protect their network! :)

Finally, a way to easily update my friends and family on "us"!

First of all - for your viewing pleasure.... a little Landon fix!


Lets see... last I posted (and really updated) he was only 11 weeks?! Holy crap where has time gone??? He's now **ahem** 21 weeks. I'm a little embarrassed?! Oh well.

I've been back at work for almost 2 months now... it sucks... I'm not even going to lie. Actual work isn't all that bad and the adult interaction is definitely much needed but being away from my little man is torture every.single.day. :( We have some pretty awesome babysitters though - and for $50/week, it doesn't get any cheaper than that!

About two weeks ago now, we had our 4 month check up. Landon was 15lbs 2 ounces and he was 25 inches long. My big boy!!! Dr. C never gives us our percentiles that I sometimes hear about but she said he was doing perfect. I'm also happy to report that we are now completely OFF the Zantac medicine we were giving him for his acid reflux!!! Woot Woot! He still spits up like a mother but that seems to be getting better as well!! But.... he's not in pain anymore so I'll take it! :) We talked to her about starting him on solids (which actually we already had tried a few times) but she said we could start on rice cereal and oatmeal if we wanted then at 5 months we could start trying the veggies - one new one every 2 or 3 days until we've tried them all and then we can do the same with fruits. Apparently babies like fruits better than veggies so if you do those first they'll never like the veggies. :) He's getting the hang of a spoon pretty well and even though she said to wait till 5 months (we're only a week shy) we went ahead and tried peas and carrots.... FAIL! Well, not really but he gagged on the peas and he only would open his mouth for two bites of the carrots. Next is green beans :)

What else... OH we are rolling... like CRAZY! Actually, he seems to have forgotten how to roll from his belly to his back but he rolls from his back to his belly with no problems and very little effort anymore. The first time I realized that he'd learned how to do this was in the middle of the night when I went in to check on him and he was sleeping peacefully on his stomach, face smooshed into the mattress. I'm not gonna lie - freaked me the eff out! Apparently he doesn't like to turn his head! haha - so pretty much every morning, that's how I find him! 

Speaking of sleeping... he's doing pretty awesome with that now too. I think we are "officially" sleeping through the night! Double woot! Usually he's rubbing his eyes from sleepiness by about 8pm so we take a bath and get him down and he'll sleep anywhere from 3am-7am... lol most of the time it's at least till 5 - the 3am wake ups are rare.

Well... I'm spent - that's quite the update finally. Hopefully I can get this internet connection to work consistently so I can update more often.

PSA & Update on us!

Hey all! Just a little PSA about my blog... I cancelled my home internet for the time being and posting from my phone is a PITA (pain in the a$$)! So as if they aren't already my posts might be pretty far and few between in the coming months. **sad face** I know :(

Anyway... a quick update on us: We are doing great, enjoying summer, and HATING being back at work. But anyway, little man Landon just turned 4 months old last week and man is he getting big! He's just amazing and I love him more and more every day!

K well, like I said... posting from my phone sucks, oh and work blocked blogger otherwise It'd post from there since I don't have enough work to keep me busy anyway :)
