Meal Plan 29!

Late again?! And I skipped last week. Sue me. :)

April 30th - May 4th

Mushroom Gravy Pork Chops - I'm using something similar to the recipe I linked but will probably spice it up a little.
Pioneer Woman BBQ Comfort Meatballs - Cause I haven't had me enough of the PW lately :)
Chicken Divan - I remember Adam saying this was SO good!
Pasta Carbonara - Another PW recipe I found while searching for the meatballs.
Country Club Chicken - I had this on a previous meal plan but I don't think I ever got around to making it?!

3 cans Cream of Mushroom soup

3/4 cups Oats

Meal Plan 28!


I'm not even going to comment on how I've taken yet another break. See yesterday's post as to why and how busy we've been! :)


Onward and upward! I'm starting off easy so my grocery list isn't too long! And I know this is late but I promise I started this post on Sunday! I'm just getting around to finish it!


April 8-14th


Mon: Beer Batter Tilapia & Fries... I just cut the fillets in half, coated them with tempura and fried them. Store bought french fries in the over and waaahhhlahhh! :) 
Tue: Clam Chowder - this recipe looks like a good base and I think I've used it before.
Wed: Split Pea Soup - I know, soup two days? But I've GOT to use up the ham bone from Easter!
Thur: Coconut Crusted Chicken Tenders - these look amazing!
Fri: Crockpot Chicken Tacos - these are SO easy!!!

Updates!


Wow... is it time to slow down yet? I feel like I've been going non-stop since the beginning of March. Oh wait, I have been?!


I haven't blogged about it yet but I went back to work part-time. I'm working at my dad's bar - not behind the counter or serving or anything like that but I'm working on the books. I'm loving it... honestly I didn't think I would but getting out of the house and learning something new has actually been really good for me. Landon as well! It helps that we found an awesome lady to babysit him! I'm finally getting the hang of things down at the bar - even though I still feel really clueless - and thing are actually starting to turn around down there though, I have no real explanation as to why?! Other than I'm actually depositing the money instead of it being pocketed somehow?! Just sayin'.


Right after I started working our ENTIRE family got sick. I mean everyone! Mom and dad, Adam and  Landon, myself, my sister?! Sick. Sucked...
It started as just a fun old head cold but then over the course of about three weeks migrated from your chest to your sinus' and then down to your throat with a nasty cough. In Landon and my mom's case it turned into a sinus infection because they were so congested. Landon's finally cleared up and then I appeared to get it again... for a total of about a month and a half. Landon seemed to get another cough but it never amounted to anything, thank goodness!


I spent a whole week planning Landon's 2nd birthday party and I thought I had everything planned out for it to go smoothly and OH Boy! was I wrong! There were about 10 kids under 5 years of age and that will never.... ever... go smoothly. Chaos describes it at best. Our main attraction was to be our banana split bar and I even forgot to get everything out! Cupcakes it was?! Oiy. 
Landon had fun regardless that he had no nap and was a bear. He got TONS of awesome gifts and slept fabulous that night :) 











He had his 24 month well "baby" checkup on Wednesday and little {big} man is 30lbs and 30 inches tall! So funny cause he is in the 25th percentile for his height but 75th percentile for his weight. I'm hoping that he's in the process of a growth spurt and he'll even out a little bit! :) She said he's perfectly normal in his speech which I was kind of concerned about since he's still speaking in single syllables. Also, his coordination and athleticism is off the charts! All good news! 
Let me tell you though the instant he turned two we've discovered the terrible two's!!! I think they are stemming from the fact that he was around a ton of older kids the last week from his party and company that we had staying with us that he's picking up on their habits or wants to do things that he can't communicate to me. But, it could also be teething or lord knows what?! Or... maybe he's just a two year old and it's all normal?! :)


After his party, mom ended up getting sick... again! What the hey! Luckily come Easter she was feeling much better and HOPEFULLY this sickness if gone from our household! We dyed eggs on Saturday night which was interesting :) Landon is still too young to know "gentle" but we got a few eggs without cracks so I guess that's a success!
Sunday morning he got to see his baskets which he LOVED! I filled his with Cars stuff and the Cars 2 movie {cause we've seen the original a bagillion times!} - Landon loved it!
Easter Sunday was so much fun! Adam made us an Easter breakfast before he headed out fishing and then Ash and I started the day with a few Mimosa's :) During Landon's nap Adam and I hid his eggs... so fun since last year he was too little to get it. Easter will always be special to us since that's the day that we got to bring him home from the hospital :) 
We had an awesome dinner and Landon played outside ALL.DAY! Literally. He did take a break though to notice a few eggs hidden and we coaxed him to find ALL of them! 








Wow... it's been a while so that was quite the update! I hope I remembered everything...  :)

Meal Plan 27!


It's going to take me forever to get to meal plan 100 if I keep falling off the wagon?! It's so hard to keep up and I don't even blog every day?! I give credit to those that do! 


I started working part time again and we've become members of the YMCA so we're on the go constantly! As a result, we've been eating like absolute crap! I need to get back in meal planning action so that we can feel good about what we're eating.


I'm getting back in action by planning out our weekend :) These are a couple that I found on Pinterest - they had me drooling!


March 1st - 3rd


Country Club Chicken - Ultimate comfort food. I'll probably use thighs instead of breasts :)
Avocado Chicken Parm - Because I loooooove avocado and this sounds super easy!
Italian Crescent Casserole - Yummy, who doesn't love crescents???




The Grocery List:
1 pound spaghetti
4 chicken breasts {I'll substitute thighs}
7 oz mushrooms
4 or 5 slices bacon
1/4 cup dry white wine
2/3 cup sharp cheddar
1 1/2 Cups Dried Breadcrumbs
1/2 Cup Tomato Pasta Sauce
1 Avocado
1/2 Cup Grated Mozzarella Cheese
Salad Greens
1lb ground beef {we'll probably use turkey}
1 cup garlic pasta sauce
1 can (8 oz) Pillsbury® refrigerated crescent dinner rolls
1 1/2 cups shredded Italian cheese blend

Meal Plan 26!

Little late but that's ok - with the holidays things got kind of crazy =/ Ooops. Better late than never! :)
I did horrible last week... didn't make it to two of my recipes. The Onion Soup - because Adam wasn't feeling it. I didn't think ahead that it's probably not the best "dinner" recipe for us. I should probably just make a small batch if I want to try it. And the Taquitos - the recipe seemed complicated and after the holidays I was so over cooking. With all the leftovers we sure as heck didn't notice us not cooking a few nights!!!

On to week 26!

January 2nd - 8th

Chicken Cordon Bleu
Guacamole Bacon Burger - I don't really need a recipe but the idea came while searching on this blog. Doesn't that look ah-mazing????Orange Chicken... I know, I make this too much but it's oh so good!
Steak over sauteed onions with red potatoes - no recipe. Hubby says he's craving steak so that's what he's getting :)
Chicken Spaghetti 

January 9th - 15th

Homemade Hamburger Helper - cause the box stuf is SO gross!!!! Brown beef with onion and seasonings, boil pasta, top with favorite sauce - done.
Lonestar Chicken Enchiladas

Pizza - I know... it's become a weekly tradition :)

Happy 2012!

The year of NO resolutions! Ok, maybe just one...

Over the last year, this blog has quickly become a meal plan blog. Oops. It's supposed to be about us and our no-so-newlywed adventures. SO my one resolution is to blog more about personal stuff instead of just having it be a place to document and follow through with my meal plans.

Yes, there will be meal plans but I'll try to update more about what's going on with us. :) Deal? Deal.

So a little update on us... we are nicely settled in over on the west side again... kind of. Back to our roots. We hoped that we could find a place of our own within a few months but are unfortunately not there yet. It's been 7 months. Fortunately, we have very generous parents who charge cheap rent :) So it's only a little sacrifice for us and hopefully not to cumbersome for my empty nester parents to now have a full nest again. Once we got over here we decided that we were going to save a little longer so that we can invest in a piece of property. We'll start by building a detached garage with a mother in law apartment in the back. I really like this floor plan...




Then we can slowly build our forever home. I haven't even looked at floorplans for that... it's just so far off. :(

Landon is now 21 month old {plus a few days!} I need to schedule his 24 month check up - I can't wait to see how big he's gotten. I swear he's getting taller and heavier every single day. I'm really excited for his second birthday party we are planning! Curious George theme... or "Dooooorge" as Landon refers to him as, complete with Adam agreeing to dress up as The Man with the yellow hat. I can't wait to see his face! Landon, not Adam. Haha.
Landon was SO much fun at Christmas this year - he was actually interested in his presents and had such a blast with all our family around! We really did get spoiled this year too and it was so great not to have to rush everywhere and be back in Spokane on the 27th.
Landon's vocabulary is finally picking up and he's learning new words every day. I was a little afraid he was behind on his speech but he's getting there. I just can't wait to fully understand what he's trying to say.
Next, we on to potty training... I'm not sure when I want to tackle that. He loves his potty... he tells me when he poops {after of course} so I think he's getting there but he has no interest in sitting on his potty with a bare butt. So I guess we'll see.


A little update on our furry family is pretty sad but we lost our poor Fosters on the 29th. He disappeared around noon and hasn't been seen since :( I feel horrible cause I let him out last so naturally I feel like it's my fault but he's a roamer and I let him out just like I would have any other day. I've got my eye on the Humane Society's website but I can't imagine someone would bring him all the way in from out here. And I also have signs that Adam will put up on this way to work tomorrow. We are bummed but he had a really good life and hopefully he's somewhere better. We think he was about 12... so maybe it was just his time?! Or maybe he found a new home in a nice new family?! I guess we'll never know unless he turns up but I'm not expecting it. I think poor Joey is depressed about it cause she's acting all funny - he was her buddy.
Before we realized Fosters was missing we tried to find a new home for our little Baby because we found a really nice family with a little girl who really wanted him but as it turns out I think he's our forever dog too. We got him back after two days because he nipped at the kids so I think they are going to find a puppy who can grow up with them instead of trying to introduce an older dog.
And then there were four :( The cat's still kickin...

Meal Plan 25!

Well here we go again!!! Shopping shall commence on Tuesday the 20th cause that's payday... then it's time to fill our budget envelopes up again! Hopefully we can put a little bit of the money we took out for the TV and for a few Christmas presents back into savings.

I have to take a moment and recap a few recipes from the last two weeks.
The Chicken Divan was SO amazing! The only thing I changed was to add fresh chopped mushrooms. It will definitely be going on a meal plan again in the near future.
The Ranch House Crock Pot Pork Chops were also amazing but I have to admit - I forgot that it was a crock pot recipe until about 3pm on the day I planned to make it :) Oops. So I coated the pork chops in the ranch seasoning, seared them off in my cast iron skillet, then I poured the soup over and stuck it in the oven on 350 degrees for like 25 min. They turned out really good!
Alright, week 25 concludes my almost year long journey of meal planning! I started in March and of course took a good amount of weeks off when we moved but I never thought I'd like meal planning! Now I kind of get anxiety if I don't at least have an idea of what I want to make for the week when I'm grocery shopping... how did I ever shop before with no plan?!?! I hope I've helped someone out along the way too! :)
