Meal Plan #12!

June 6th - 13th

Aaaaaaand we're back!
I only took a week off... not too shabby! I probably should take another week off to really get settled but I can't help myself. Being a stay at home mom for the time being is taking a toll on me and I feel like I need to keep myself busy with "things" to do other than entertain Landon allllll day {although that's my number one task obviously}. Anyway, this week is kind of missmash and I already have a few nights of things planned but I thought I'd give it a go anyway :)
So, on to week 12! I think Adam is going back to Spokane this weekend to get the rest of our stuff so Fri/Sat Landon and I are going to fend for ourselves. So on Friday I made dinner plans with my sister :)

Monday: Aloha Pork Chops - a good one from week #1 :)
Tuesday: Mom took out some salmon that I imagine will get baked with lots of butter, onions and lemon... YUM!
Wednesday: We're heading to Grandma's house to celebrate her birthday and BBQ burgers!
Friday: Cloverleaf!!!! I can't believe it took me over a week to get there!
Saturday: TBD... something easy.
Sunday: French's Onion Chicken Cordon Blue {I linked to my regular French's Onion Chicken but I'm doing a twisted version... I'll try to take pictures and post an updated recipe

Red onion
Green pepper

Tuesday: French's Onion Chicken (with a twist!) - I did a play on Chicken Cordon Bleu, I flattened out the breasts and rolled them up with Smoked Gouda Cheese and ham in the middle, then prepared as directed for the French's Chicken... Adam said it was the best chicken I've ever made! YUM! :)
Thursday: My auntie is going to be in town and wants to take us to dinner! Wohoo! Night out! :)

Meal Plan #3!

March 20th - 26th

Well, week 2 didn't go so hot - I did it again, putting two casseroles right in a row! What was I thinking??? Anyway, on Wednesday Adam was working late anyway so I ordered a pizza =/ And bumped the Tator Tot Casserole to Thursday. It was a good decision since we had some friends over and that casserole is so easy. Then we had the Apple Pork Chops last night - not great. Actually, nothing throughout the week really stood out to me.

Adam's camping tonight so I'm not planning anything - even though I'd really like to have those Chicken Enchiladas Verdes that we never got to! Maybe this week since I already bought all the ingredients?!

So on to week 3!!! This is so much fun for me finding all these new recipes! However, Adam brought to my attention that we don't need some elaborate (or even easy) new recipe every night, so this week is about some of our favorites, with a few new ones thrown in to keep it interesting, enjoy!

Sunday: Beef Round Tip Roast on the Rotisserie <-- Adam's own recipe :)
Monday: Fish Tacos <-- I'll post my own recipe after we make this... YUM!
Wednesday: Crockpot Beef Stroganoff <-- I'm giving this another go cause I've been dying to use my crockpot!
Thursday: Ravioli, Caesar Salad & Garlic bread <--- Um yes, it's from a bag... lazy week?!
Friday: Chicken Enchiladas Verdes <-- I omitted the ingredients from the grocery list cause I have them for last week, check out meal plan 2 if you need them!
Saturday: TBD :)

The Grocery List:

Beef Round Tip Roast
1lb Tilapia Filets
Tempura batter
Corn tortillas
Cabbage/Corn mix
Lime

Dinner Impossible...

Well go figure... I planned a yummy dinner tonight and before I could tell Adam he had made plans to go hunting after work. Erg... such is the life of a hunter - during hunting season I should pretty much not count on him for dinner - it was good by myself anyway. He'll be enjoying the cold leftover version here shortly when he gets home :)

French's Onion Chicken

Ingredients:
  • Boneless skinless chicken breasts
  • Mustard (either regular yellow or dijon works)
  • French's Fried Onions
Directions:
Thaw chicken and remove fat. Coat in mustard. Crush up onions and coat chicken. Bake at 350 degrees for 45 min or until cooked through.

Twice Baked Potatoes

Ingredients:
  • Baker potatoes
  • Butter
  • Gorgonzola Cheese
  • Bacon bits
  • Milk
Directions:
Bake or microwave potatoes until partially cooked and soft to the touch. Cut off tops and scoop out centers. Place a few crumbles of Gorgonzola cheese and 1/2 tbsp of butter in the bottom of each skin - bake in the oven on 350 degrees for 30 min. While the skins are baking, mash the inside of the potatoes with milk and butter. After the skins are done, fill with mashed potatoes. Top with cheese crumbles and bacon bits and cook until cheese is melted and bubbly.

Cheesy Bacon Green Beans

Ingredients:
  • Fresh green beans
  • 3-4 slices of bacon
  • Gorgonzola cheese
  • Almond slices
Directions:
Cook bacon and set aside to cool and crumble. Place almonds in the oven to roast on 350 degrees for 15 -20 minutes or until golden. Blanche green beans. Saute green beans in bacon grease. Place on serving dish and top with bacon, Gorgonzola crumbles and almonds.

So there ya go! My yummy dinner... topped with a glass of Chardonnay - I'm not sure that's the right pairing but it suited me just fine :) Cheers!
